STIR FRIED ANCHOVIES with ALMOND

Whenever we have dinner at a Korean restaurant, most of the time we will have this stir fried anchovies as one of the side dish.

We love it and it is one of the source of calcium. And we also use “unsalted roasted almond” here. This what make this Lazy mom’s  recipe special!

I tried to make it on my own way and it is very easy. It is fast too and not much preparation.

I always prepare two type of it, Sweet and Sweet & Spicy.

Besides my own family, I have also cooked this for some other people too! And the feedback is very good! Some of them ask for the recipe!

 STIR FRIED ANCHOVIES with ALMOND
Ingredients:1 cup small dried anchovies

2 tsp canola oil or vegetable oil

1/2 cup of unsalted roasted almond (ready to eat)

 

Sweet (Non Spicy) :

2 tsp soy sauce

3 tbs rice wine (or mirin) – (I use the Non Alcohol Mirin)

3 tbs water

4 tbs honey

3 garlic cloves, thinly sliced

1 teaspoon sesame oil

1 teaspoon sesame seeds

 

Sweet and Spicy:

1 tbs gochujang (Korean red chili pepper paste)

1 tsp soy sauce

3 tablespoons rice wine (or mirin) – (I use the Non Alcohol Mirin)

3 tbs water

4 tbs Honey

3 garlic cloves, thinly sliced

1 teaspoon sesame oil

1 teaspoon sesame seeds


Method: 

– Heat a pan with the oil over medium heat and stir fry the anchovies for 2 – 3 minutes. Turn off the heat and transfer to a plate. Put aside.

– Heat the pan again, add all ingredients (except the anchovies and almond) to the pan. Stir the sauce well to mix. Turn the heat back on. Boil the sauce over medium heat until it bubbles and slightly thickens, about 3 minutes.

– Add the unsalted roasted almond and anchovies the pan. Stir well until the anchovies and unsalted roasted almond are coated well with the sauce.

Ready to serve!

Tips: You can change almond to peanut.
