Looking for something that will be liking by adults and kids?
But you are too lazy to cook? You need something simple?
We planned to have picnic with some friends.
There will be some adults and kids.
Most kids will love Mac and Cheese.
So I am thinking of making Mac and Cheese in a different way. Why? I am too lazy to bring some bowls, plates, spoons and forks.
I started to look for a recipe in the internet. I found it.
But don’t forget that I am The Lazy Mom!
I tried to change it here and there to make it more simple!
And here is the result
— Mac and Cheese Cupcake —
2 cups uncooked elbow macaroni
3.5 cups sharp cheddar cheese, shredded
1 cup parmesan grated
1/2 teaspoon salt
2 teaspoon vegetable oil / other cooking oil
1.5 cups milk
1 tablespoon butter
One small bag goldfish baked snack crackers (smash)
Preheat the oven to 350 degrees F (175 degrees C). Grease a muffin tin with nonstick cooking spray.
Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for about 8 minutes, it should still be a little bit firm. Remove from the heat, drain and return to the pan; stir in the butter and egg until pasta is evenly coated.
Reserve 1/2 cup of sharp Cheddar cheese and stir the remaining Cheddar cheese, parmesan cheese, milk, onion powder, garlic powder into the pasta. Spoon into the prepared muffin tin.
In a small bowl, stir together the gold fish cracker, vegetable/cooking oil, set aside (you also can add a little bit of salt if you want – optional)
Sprinkle the reserved cheese and the gold fish cracker mixture (as mentioned above) over the tops.
Bake for 30 minutes in the preheated oven, or until the topping is nicely browned. Allow the muffins to cool for a few minutes before removing from the pan. This will allow the cheese to set and they will hold their muffin shape.
